Vegan Pumpkin Pie

 
2 cups Pumpkin mashed
1 cup Soymilk (plain)
3/4 Cup Sucanat (brown sugar alternative found in health food stores)
1 TBS. molasses
1/2 tsp. salt
1/2 tsp. nutmeg
3 TBS. oil
1 tsp. cinnamon
1/2 tsp. powdered ginger
1/2 tsp. powdered cloves
1/4 cup cornstarch
 
Mix cooked mashed pumpkin with soymilk and sucanat or brown sugar. Add oil and molasses. Mix the cornstarch with the spices and stir in. Pour into unbaked pie shell. Bake in a hot oven (425) for 10 minutes, then reduce heat to (350) and bake 40 to 50 minutes until filling is set in the middle.
 
The pie shell I used was a whole wheat pie shell pre made sold at Wegmans in the health food department freezer.
