Dahl Soup
2 Tbs. Margarine or Butter
2 cloves of garlic crushed
1 onion chopped
1/2 tsp. turmeric
1 tsp. garam masala (can be bought at Indian
grocery Kashmir's on Erie Blvd.)
1/4 tsp. chilli powder
1 tsp. ground cumin
4 oz canned chopped tomatoes drained
1 cup red lentils
2 Tsp. lemon Juice
2 1/2 cups vegetable stock
1 1/4 cups coconut milk
salt and pepper
cilantro to garnish
Melt margarine in a large sauce pan. Add the
garlic and onion and saute,stirring for 2-3 minutes. Add the Turmeric,
garam masala, chili powder and cumin and cook further 30 seconds.
Stir in tomatoes, red lentils, Lemon juice,
vegetable stock, and coconut milk and bring to a boil.
Reduce the heat to low and simmer the soup
uncovered about 20-30 minutes until lentils are tender.
