Chico's 3 -Seed Bread

 
Over 1 1/2 cups rolled oats, pour 3/4 cup boiling water.
let sit until warm but not hot
 
Add      2 1/4 cup potato water
             1/4 cup honey or pure maple syrup
             1 tbs. yeast
 
Let that bubble, then add 3 cups of whole wheat bread flour. Let that rest 20 minutes.
 
Add   1/3 cup safflower oil
          1/4 cup honey or maple syrup
          1 tsp.salt
          1/3 cup sunflower seeds raw
          1/3 cup poppy seeds
          1/3 cup sesame seeds
 
Begin kneading dough, adding flour only to keep from sticking. Knead for 10 - 15 minutes. Let rise in a warm place until it doubles. Punch down and shape in 2 loaves. Place in oiled pans and let rise to double again. Bake at 350  for 45- 50 minutes.
