California Caviar
(Served at the Yoga Center for Kirtan Potluck 9/23/2007)

1 can black-eyed peas (rinsed, drained)
1 lg tomato (diced)
1 bell pepper, diced
1/4 c chopped gr onions
1/4 c rice vinegar
1 T. olive oil
1 jalapeno pepper, minced
1 clove garlic, minced
1/4 t salt
1/3 c chopped fresh cilantro


In large bowl combine, peas, tomato, bell pepper & green onions.
Combine vinegar, oil, jalapeno pepper, garlic and salt, mix well. Pour
over vegetables, mix well. Cover, refrigerate at least 2 hrs . Just
before serving stir in cilantro. Serve chilled  or at room temperature
with tortilla, pita, bagel chips or crackers.

Serves 12 (makes about 4 c)
